In 1999 to conform to European standards, a new mill was built. The crusher, mixer, extractor and steel vats have none of the charm of bygone days. There are no more workmen; the operation is run by a production technician. At the same time, we still use the traditional production methods.
A new olive grove with 450 trees was planted in 1995. The residue from the two mills (solid residue is called 'grignon' (grounds) liquid residue is called 'margine') is used as a natural fertiliser for the olive trees
